This recipe is great for the holiday season when guests come and go. We all have some form of holiday cookies around which can be used in place of biscotti
Comes together in minutes with items on hand!
Ingredients
1 cup ricotta ( may substitute cottage cheese or yogurt or whipped heavy cream )
1 cup softened goat cheese. ( may substitute a softened Camembert /rind removed, Gorgonzola dolce or plain boursin)
1 T extra virgin olive oil ( a mild buttery extra virgin olive oil works best)
1 T honey
1 t vanilla extract
1 t lemon zest
Sprinkle of sea salt
How to Make It

Mix together ingredients above in a blender, processor or hand mixer reserving the evoo & honey until the end.

When ingredients are well blended slowly pour in the olive oil followed by honey to reach a lovely soft creamy consistency.

Serve in tumblers or parfait glasses with biscotti or other holiday cookies on hand.
Variations
Add dried fruits such as dried cranberries, nuts or seeds.
Dip biscotti in chocolate spread before adding to the crema.
